Clay Township, Lancaster County – The Fox family approached Diehm with a dream to open a new creamery, restaurant and store on the site of a former car dealership at the intersection of North Clay Road and West Main Street (US Route 322). The site was small and the Foxes’ dreams were big. Diehm worked with the family and their builder, Hoover Building Specialists, to get the largest building on the site and maximize parking. The site is entirely in the 100-year floodplain. This required additional work by Diehm to satisfy the requirements of the Township and FEMA. Extensive work by Diehm with the Township, DEP and Ephrata Borough was required to address sewage disposal on the site, resulting in a win-win solution for the Fox family and the various agencies. The project also required zoning hearing board approval, land development, and PennDOT approval. Fox Meadows Creamery opened in April 2015.
